In our vineyards, we utilize organic farming practices and the winemaking process begins with the hand-picked choice of grapes. Cold skin contact is the next step in the winemaking procedure,without applying any additives and improving substances such as enzymes, fermentation occurs by using natural indigenous yeasts. The production rests refrigerated for at least three months. Then, the wine is being bottled by utilizing the natural flow process without using pumps or filters. We produce our wines through mild natural winemaking processes which then mature in our cellars, situated 12 meters underground and surrounded by a thick layer of pumice, creating the ideal environmental conditions for wine ageing.
